Pork tenderloin is an extremely versatile lean cut and really quick to make for weeknight dinners (or fancy enough to save for the weekends). Not to be confused with porkloin – which is very large and can be cut into chops and roasts – the tenderloin is a small roast, usually about 1 or 1 1/2 pounds. They are generally sold in packs of two. One porkloin is the perfect size for single people or couples; two tenderloins are just right for a family.
One thing I particularly love about pork tenderloin is that it roasts up very quickly in the oven – in minutes instead of an hour or more. (I still remember the first time I made one in the oven; I kept looking at the recipe thinking I had misread the roasting time!) And recently, I just tried cooking pork tenderloin in the Instant Pot.
