Pork tenderloin is an extremely versatile lean cut and really quick to make for weeknight dinners (or fancy enough to save for the weekends). Not to be confused with porkloin – which is very large and can be cut into chops and roasts – the tenderloin is a small roast, usually about 1 or 1 1/2 pounds.
